A big part of true food freedom is knowing which boundaries you can relax and which ones you’re better off keeping. I know I’ll feel crappy the next day and fight cravings for a couple days if I pig out on sugar and carbs. And I do try to avoid gluten. But, a little artificial sweetener now and then and some dairy is okay in my book. (YMMV)
So this strawberry cheesecake pie (also known as “strawberry pretzel salad” in the Midwest) is a good compromise. It’s got cream cheese, cream, and Jello (definitely not real food), but it’s gluten free, refined sugar free, corn syrup free, and lower carb. Also: cute and portable! Perfect for potlucks.
